
Really, what sounds better than cream cheese frosting baked until gooey with fresh strawberries? The answer is nothing.
This is probably my most challenging recipe to date. Starting off strong! But don’t shy away, just follow the directions, and in a bout three hours, you’ll have yummy gooey cinnamon rolls!
Ingredients
Dough:
- 1 cup oat milk
- 1/2 cup sugar + 1 Tbsp
- 1 Tbsp active dry yeast
- 1 large eggs, room temperature
- 1 tsp vanilla
- 4 cups flour
- 1 tsp salt
- 1 1/2 tsp cinnamon
Filling:
- 3 Tbsp butter, melted + 3 Tbsp butter, softened
- 1/2 block cream cheese, softened
- 1 pint strawberry, thinly sliced [reserve 4 strawberries]
- 1 1/2 cup powdered sugar
- Dash of vanilla
- 2 tsp brown sugar
- 1 tsp cinnamon
Frosting:
- 1 block cream cheese, softened
- 3 Tbsp butter, softened
- 1 1/2 cup powdered sugar
- Dash of vanilla
Directions

- Warm milk to 105*, on stove. It is warm but not hot to the touch
- In a stand mixer, whisk together warm milk, yeast, and 1 Tbsp of sugar
- Let sit for 5 minutes until foamy
- Using a dough hook, combine sugar, butter, eggs, and vanilla until combined
- Add flour, salt, and cinnamon, mixing on low and slowly increasing to high
- Knead dough with mixer until a ball forms. Dough will feel tacky to the touch. If too sticky, mix in 1 Tbsp of lour at a time until tacky
- Pour onto a floured surface. Knead until smooth. Form into a bowl
- Transfer to a greased bowl and cover with a warm towel. Leave to rise in a warm area, I prefer the oven, for 1 hour, until doubled in size
- While the dough is rising, make the filling. With a hand mixer, combine cream cheese, softened butter, vanilla, and powdered sugar until smooth
- For a more extreme strawberry flavor, mash strawberries so there is some juice
- Mix together cinnamon and brown sugar
- When dough has risen, pour to lightly floured surface. Form into a rectangle and roll out to 12×24 rectangle and 1/4 inch thick

- Brush dough with melted butter. Spread a thin layer of cream cheese over the dough. Place strawberries in lines across dough
- Sprinkle with cinnamon brown sugar mixture
- Starting on the short end, roll up, starting small and moving left to right
- Cut into 1 1/3 inch rolls
- Place in a parchment paper lined baking dish. I used two 9×13 dishes, leaving space between rolls
- Cover with a towel and let rise for an additional 30 minutes
- While rising, preheat oven to 350*
- Baking in center of oven until golden brown, about 27-35 minutes. If starting to get too brown without the center cooking through, cover with aluminum foil
- While baking, make cream cheese frosting by combining remaining cream cheese, butter, vanilla, and powdered sugar
- Remove rolls from oven and let cool for 8-10 minutes
- Frost with cream cheese and top with reserved strawberries
- Eat while warm!
