Rosemary Balsamic Fig + Potatoes

This side dish could really stand to be the star of the show if you let it.

Ingredients

  • 1/2 vidalia onion, chopped
  • 3 medium red potatoes, chopped
  • 1 small sweet potato, chopped
  • 2 cloves garlic, chopped
  • 3 Tbsp avocado oil
  • 3-4 Tbsp balsamic vinegar
  • salt + pepper to taste
  • 1 tsp red pepper flakes
  • 2-3 Tbsp chopped fresh rosemary + 1 tsp for garnish
  • 12-17 small figs, halved

Directions

  • Saute onion and garlic in 2 Tbsp oil, until translucent
  • Add potatoes, on medium heat, until crisped, about 10-12 minutes
  • Move heat to low and cover, stirring every 5 minutes for 20 minutes
  • Add salt, pepper, red pepper flakes, and fresh rosemary. Drizzle with 1 Tbsp oil
  • Stir for an additional 5 minutes
  • Add figs. Drizzle with balsamic vinegar and stir for 5-8 minutes until figs are warmed through
  • Plate and top with rosemary and balsamic glaze drizzle
