
This side dish could really stand to be the star of the show if you let it.
Ingredients
- 1/2 vidalia onion, chopped
- 3 medium red potatoes, chopped
- 1 small sweet potato, chopped
- 2 cloves garlic, chopped
- 3 Tbsp avocado oil
- 3-4 Tbsp balsamic vinegar
- salt + pepper to taste
- 1 tsp red pepper flakes
- 2-3 Tbsp chopped fresh rosemary + 1 tsp for garnish
- 12-17 small figs, halved
Directions
- Saute onion and garlic in 2 Tbsp oil, until translucent
- Add potatoes, on medium heat, until crisped, about 10-12 minutes
- Move heat to low and cover, stirring every 5 minutes for 20 minutes
- Add salt, pepper, red pepper flakes, and fresh rosemary. Drizzle with 1 Tbsp oil
- Stir for an additional 5 minutes
- Add figs. Drizzle with balsamic vinegar and stir for 5-8 minutes until figs are warmed through
- Plate and top with rosemary and balsamic glaze drizzle
