Gluten Free Zucchini Bread

This recipe can be made with all-purpose flour, if you so choose! This is NOT your grandma’s zucchini bread, made with garden fresh zucchini and packed with spices, you will want to eat this as soon as it’s out of the oven!

Ingredients

  • 3 cups gluten-free flour
  • 2 cups shredded zucchini
  • 1 cup sugar
  • 1 1/4 cup brown sugar
  • 1 cup melted butter
  • 3 tsp vanilla
  • 1 Tbsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 3 eggs

Directions

  • Preheat oven to 325*
  • Whisk together flour, cinnamon, nutmeg, salt, baking soda, and baking powder
  • Mix sugars, vanilla, eggs, and butter together until smooth
  • Combine wet and dry ingredients until smooth
  • add shredded zucchini and mix until combined
  • Grease and flour two loaf pans. I melt my butter in the loaf pan while the oven is preheating, before adding to the recipe, I coat the sides of the pan, then dust with flour
  • Divide batter evenly between the two loaf pans
  • Place on middle rack in the oven for 45-60 minutes until toothpick comes out clean
