Hand Cut Home Fries

It is no secret that I view potatoes as a major food group. I eat potatoes every single day of my life and one of my favorite ways is home made french fries! Before you go thinking french fries are unhealthy, when you make them at home, you get to control what goes in the recipe. These are baked, not fried, and made with avocado oil. So, basically, they are roasted and celebrate the integrity of the potato. I will not lie, I have eaten these as a complete meal more times than I can count.

Ingredients

  • 4 red potatoes
  • 2 Tbsp avocado oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic
  • 1 tsp oregano
  • 1 ts parsley

Directions

  • 1. Preheat oven to 400*
  • Slice potatoes into fry form (whatever that means to you!)
  • Toss with oil and all seasoning
  • Bake on a large cookie sheet lined with parchment paper for 15 minutes
  • Flip and bake until desired crispiness, about 15-20 additional minutes
