Blueberry Balsamic Chicken

This chicken recipe is the perfect combination of sweet and spicy. A great way to use up summer blueberries in a non-traditional fun recipe!

Ingredients

  • 2 chicken thighs
  • 1 cup fresh blueberries
  • 2 1/2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 1 tsp red pepper flakes
  • 3 Tbsp water
  • 1 Tbsp avocado oil
  • 1 tsp cayenne pepper
  • salt and pepper to taste

Directions

  • Preheat oven to 375*
  • Season chicken with salt, pepper, and cayenne on both sides
  • Heat avocado oil over medium heat, in oven safe skillet, until smoking
  • Sear chicken for 6-7 minutes per side
  • Bake chicken in oven for 18-20 minutes or until internal temperature reaches 165*
  • While chicken is cooking, combine blueberries, balsamic vinegar, red pepper flakes, and water in a medium sauce pan
  • Bring to a boil, then lower heat for sauce to thicken
  • Remove chicken from oven and spoon juices over chicken for 5 minutes
  • Drizzle with blueberry glaze and pair with your favorite roasted veggies
