
This chicken recipe is the perfect combination of sweet and spicy. A great way to use up summer blueberries in a non-traditional fun recipe!
Ingredients
- 2 chicken thighs
- 1 cup fresh blueberries
- 2 1/2 Tbsp balsamic vinegar
- 2 Tbsp honey
- 1 tsp red pepper flakes
- 3 Tbsp water
- 1 Tbsp avocado oil
- 1 tsp cayenne pepper
- salt and pepper to taste
Directions
- Preheat oven to 375*
- Season chicken with salt, pepper, and cayenne on both sides
- Heat avocado oil over medium heat, in oven safe skillet, until smoking
- Sear chicken for 6-7 minutes per side
- Bake chicken in oven for 18-20 minutes or until internal temperature reaches 165*
- While chicken is cooking, combine blueberries, balsamic vinegar, red pepper flakes, and water in a medium sauce pan
- Bring to a boil, then lower heat for sauce to thicken
- Remove chicken from oven and spoon juices over chicken for 5 minutes
- Drizzle with blueberry glaze and pair with your favorite roasted veggies
