Seared Chicken Thighs

I kid you not, this is the best chicken recipe you’ll ever try! If you want to add a little heat, add a pinch of cayenne pepper, looking for something a bit different, add a pinch of cinnamon! It is basically the only way we cook chicken these days. Crispy on the outside, perfectly cooked on the inside.

Ingredients

  • 2 bone-in skin-on chicken thighs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 Tbsp avocado oil

Directions

  • Preheat oven to 400*
  • Heat oil in skillet over medium high heat until smoking
  • Season chicken on both sides with paprika, salt, and pepper. Put paprika directly on skin of the chicken
  • When oil is smoking, add chicken. Turn heat down to medium and cook on each side for 6-7 minutes, until browned
  • Place in oven for 20-25 minutes until internal temperature reaches 165*
  • Remove from oven and spoon juices over the chicken for 5 minutes (Seriously, don’t skip this step!!)
  • Enjoy with roasted veggies, pasta, or over a fresh salad
