
I know, I know, what is fun about a vegetarian pizza? I promise you, this will blow your mind. This is not your average pizza, as it is covered in roasted veggies and doesn’t even have cheese. With all of this flavor, you won’t even miss it! I cheat on this recipe because I tried to find the easiest, quickest way to make my favorite dish. I bought pre-made pizza crusts with sauce included but this will not taste store bought when I’m finished with it!
Ingredients
- 6 mini pizza crusts (sauce packets included) [we prefer thin crust]
- 1/2 zucchini, thinly sliced
- 1/2 head broccoli, chopped
- 1/2 vidalia onion, chopped
- 1/2 yellow squash, thinly sliced
- 1/2 green pepper, sliced
- 2 mini sweet peppers, sliced
- 1 small red potato, sliced
- 1 Roma tomato, sliced
- 1 1/2 Tbsp avocado oil
- 2 tsp Italian seasoning
- 1 tsp dried parsley
- 1 tsp dried oregano
Directions
- Preheat oven to 425*
- Slice all veggies thinly
- Brush each mini pizza with avocado oil
- In a small bowl, empty sauce packets and add 1 tsp Italian seasoning, 1/2 tsp parsley, and 1/2 tsp oregano. Stir to combine
- Spoon sauce onto each pizza leaving a small rim of crust
- Top with veggies of choice (excluding tomato)
- Drizzle each pizza with avocado oil and sprinkle with remaining parsley, Italian seasoning, and oregano
- Place in oven for 18 minutes. Top with tomato and bake for an additional 5 minutes
Notes:
- Gluten Free – buy a cauliflower crust pizza from you local grocer instead of regular wheat crusts
- If you don’t have sauce packets, make your own! Use one can of tomato sauce, add the same amount of seasoning as shown above, and 2 minced garlic cloves
- Use whatever veggies suit your fancy. I typically just go in the fridge and pick out one of every veggies I’ve got!
