
Lemon is by far my favorite fruit to turn into desserts and I’m not sure why I haven’t tried my hand at lemon bars yet! But have no fear, there is always a plan. I paired these lemon bars with my friends AMAZING homemade Fig + Goat Cheese ice cream. The lemon pairs perfectly with the tang of the goat cheese and the roasted flavor of fig. I gotta tell you, this was the perfect treat as we are transitioning from hot, humid summer days to cool fall evenings.
Ingredients:
- 1 sleeve of Ritz crackers, crushed
- 6 Tbsp butter, melted
- 1/2 cup brown sugar
- Zest of two large lemons
- Juice of two large lemons
- 1 egg
- 2 egg yolks
- 1 can of sweetened condensed milk
- 1/8 cup sugar
Directions:
- Preheat oven to 350*
- Mix together crushed crackers, butter, and brown sugar
- Line an 8×8 baking pan with parchment paper
- Press the crust into the bottom of the pan and bake for 15 minutes until golden
- While the crust is baking, whisk together lemon zest, lemon juice, egg, egg yolks, sweetened condensed milk, and sugar
- When the crust is finished, pour in the lemon batter. Bake for an additional 15 minutes until set
- Cool completely on the counter and then move to the fridge to cool for at least two hours or overnight
