
A few weeks ago, Outstanding Foods reached out and asked if I would try their four flavors of Pigless Pork Rinds – how could I say no?! I’ve only tried one flavor so far, these Hella Hot and wow, do they pack some heat! I decided to get creative and bread cauliflower with the crushed rinds! I highly recommend you check these out!
Ingredients:
- 1 Head of cauliflower
- 1 bag of Hella Hot Pigless Pork Rinds, crushed
- 1 cup flour
- 1/2 cup corn starch
- 1 tsp baking powder
- A pinch of salt & pepper
- 1/2 tsp red cayenne pepper
- 1 cup of water
- 1 tsp hot sauce (I used ghost pepper sauce, it’s all I had)
- Oil for frying
Directions:
- Heat oil on medium heat until it reaches 350*
- Cut cauliflower into small or medium florets
- Place crushed pigless pork rinds in a medium bowl
- Whisk together flour, corn starch, baking powder, salt, pepper, red cayenne pepper, hot sauce, and water in a different medium bowl
- Using one hand, dip the cauliflower into the wet batter and with the other hand, dip into the dry batter

- Drop into the oil and let cook until gold brown, turning over a couple times, about 8-10 minutes
- *Be sure to not overcrowd the pot or else the oil will lose heat
- Continue frying until all cauliflower is finished
Be patient with this recipe. If you heat your oil too high or too quickly, there is a chance it could burn.
I highly recommend drizzling with spicy honey as a final touch!
