Jalapeno Corn Fritters

Ingredients:

  • 1 can of corn
  • 3 Tbsp flour
  • 2 tsp baking powder
  • pinch of salt + pepper
  • 2 jalapeno, chopped
  • 1 egg
  • 2 Tbsp powdered sugar
  • 2 Tbsp brown sugar
  • 2 Tbsp oat milk
  • 1 Tbsp coconut oil + more for frying

Directions:

  • Whisk together all ingredients and then pulse in either a food processor or with an immersion blender
  • Heat oil in a shallow pan on medium heat until sputtering
  • Using a tablespoon, spoon batter into pan into small circles
  • Flip when golden brown, about 4 minutes per side
  • Continue making fritters until all batter is cooked
  • Pair with sriracha or sriracha and sour cream!
