
Ingredients:
- 1 can of corn
- 3 Tbsp flour
- 2 tsp baking powder
- pinch of salt + pepper
- 2 jalapeno, chopped
- 1 egg
- 2 Tbsp powdered sugar
- 2 Tbsp brown sugar
- 2 Tbsp oat milk
- 1 Tbsp coconut oil + more for frying
Directions:
- Whisk together all ingredients and then pulse in either a food processor or with an immersion blender
- Heat oil in a shallow pan on medium heat until sputtering
- Using a tablespoon, spoon batter into pan into small circles
- Flip when golden brown, about 4 minutes per side
- Continue making fritters until all batter is cooked
- Pair with sriracha or sriracha and sour cream!
