
What better way to watch the Vice Presidential debate than to post a recipe of something that is currently helping me get through it without alcohol…
Ingredients:
- 4 red potatoes
- 4 small sweet potatoes or 2 large
- 1 onion
- 1 package of asparagus
- 3 carrots
- 2 apples such as honey crisp or rome beauty
- 2 Tbsp avocado oil
- 1 1/2 tsp dried rosemary
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic
- 1 Tbsp balsamic glaze or balsamic vinegar
Directions:
- Preheat oven to 400*
- Chop all veggies and apples to a similar size
- Stir vegetables with oil and all seasoning
- Bake on baking sheet for 18 minutes, stir and then bake for another 18 minutes
- Remove from oven and drizzle with balsamic glaze
*OPTIONAL: Grill a marinated skirt steak until 145* then slice with the grain and toss with the vegetables*
- Skirt Steak
- 1/2 cup avocado oil
- 1/3 coconut aminos
- 3 Tbsp brown sugar
- 3 cloves of garlic, chopped
- 2 Tbsp Worcestershire sauce
- 1 tsp pepper
Marinate for 4-8 hours. Grill until inside is 145*. Let rest for 8 minutes and then slice with the grain and toss with vegetables.
