I’ve been pretty MIA lately – sorry! We had a death in the family and have been traveling. BUT I wanted to share with you one of our favorite fall dishes. I hope you enjoy!

Ingredients:
- 2 Acorn squash
- 1 Apple
- 1 onion
- 1lb mild sausage
- 1 Tbsp avocado oil
- 1 egg
- 1 tsp Sage
- 1/4 tsp garlic powder
- 2 cloves of garlic
- salt and pepper to taste
Directions:
- Preheat oven to 350*
- Cut squash in half length-wise and scoop out seeds
- Drizzle with oil, dust with salt, pepper, and garlic powder
- Place in oven, skin side down for 15-18 minutes
- Heat skillet on medium high heat. Cook onion and garlic until translucent.
- Add sausage and cook until browned
- Add in apple and cook for 5-7 minutes
- Stir in sage, salt, and pepper until combined and cooked through
- Remove from heat and mix in egg
- spoon mixture until squash boats. You will have extra, just bake it on the cookie sheet
- Bake for an additional 12-17 minutes until browned
