Stuffed Acorn Squash

I’ve been pretty MIA lately – sorry! We had a death in the family and have been traveling. BUT I wanted to share with you one of our favorite fall dishes. I hope you enjoy!

Ingredients:

  • 2 Acorn squash
  • 1 Apple
  • 1 onion
  • 1lb mild sausage
  • 1 Tbsp avocado oil
  • 1 egg
  • 1 tsp Sage
  • 1/4 tsp garlic powder
  • 2 cloves of garlic
  • salt and pepper to taste

Directions:

  • Preheat oven to 350*
  • Cut squash in half length-wise and scoop out seeds
  • Drizzle with oil, dust with salt, pepper, and garlic powder
  • Place in oven, skin side down for 15-18 minutes
  • Heat skillet on medium high heat. Cook onion and garlic until translucent.
  • Add sausage and cook until browned
  • Add in apple and cook for 5-7 minutes
  • Stir in sage, salt, and pepper until combined and cooked through
  • Remove from heat and mix in egg
  • spoon mixture until squash boats. You will have extra, just bake it on the cookie sheet
  • Bake for an additional 12-17 minutes until browned
