Now, this cut of steak is way too expensive for my wallet but find it on a good sale and wowza is it worth it. I highly recommend getting one of these bad boys if you can! This recipe was developed on a whim but I wish I could have this cut of steak once a month. So good.

Ingredients:
- One tomahawk steak
- 1 Tbsp avocado oil
- Salt and Pepper to taste
- 1 full head of garlic
- 4 sprigs of rosemary
- 3 Tbsp butter
Directions:
- Preheat oven to 350*
- Cut off top portion of garlic head, drizzle with avocado oil, and wrap in aluminum foil
- Bake for 20 minutes. Remove from oven and let come to room temperature
- While garlic is cooling, let steak come to room temperature. Sprinkle with salt and pepper on both sides
- Wrap bone of steak in aluminum foil
- Heat avocado oil in cast iron skillet on medium heat. When sputtering, sear first side for 5 to 6 minutes
- Flip over using tongs, and sear second side for 4-5 minutes
- Place in oven and bake for 15-18 minutes until internal temperature reaches 120*
- Remove from oven, add butter, rosemary, and squeeze garlic cloves into skillet
- Spoon mixture over the steak for 5 minutes
- Remove aluminum foil from bone
- Let rest for an additional 5 minutes
- Slice the steak against the grain and serve
*Internal temperature of steak will rise while resting. Ours reached a perfect 135/140* before we ate!
