Vegetarian Potato Soup

This crock pot made soup is quick, easy, and best of all – can be made vegetarian or not! Whatever you choose!

INGREDIENTS

  • 7 Yukon Gold potatoes, diced and peeled
  • 1 yellow onion, diced
  • 1 cup baby carrots, diced
  • 1 carton of vegetable or chicken broth
  • 1 stick of butter, cubed
  • 2 heaping Tbsp of minced garlic
  • 2 Tbsp dried thyme leaves
  • 1 tsp salt
  • 2 tsp black pepper

DIRECTIONS

  • Throw all ingredients in a crockpot and stir. Cook on high for 5 hours or low for 7-8 hours.
  • Using an immersion blender, pulse blend until all potatoes are chopped
  • Enjoy immediately with No-Knead Bread!

*If you want a chunky soup, remove 1/3 of the potatoes prior to blending. Add back in and stir before serving

*If you would like to add bacon, crisp bacon in a skillet, crumble, and mix into soup before serving
